Hello beautiful people!
If you follow me on Snapchat (@richardsonaut) you know that I practically LIVE on acai bowls. Well, I like to have 2-3 a week.. They are so dang expensive! But they are waayy cheaper if you make them yourself.
Acai is a little delicate berry that is classified as a super food. It is full of antioxidants and omegas. It has a very subtle “cocoa” flavor, but you can deferentially tell by the taste, that it is a berry!
Acai comes in two forms: dried powder, and frozen packets.
I prefer frozen packets because I am volume eater, haha! But, the frozen powder works too, and it lasts longer. So it really comes down to personal preference.
I, of course, believe that my recipe is the best hehehe. This one is a Berry Blast, but I also have a Chocolate Covered Cherry acai bowl flavor (YUM) and I will share that recipe with yall, too!

Another fun thing about making an Acai bowl is the toppings. Literally the sky is the limit, but today I chose fine ground chia seeds, bee pollen, cocoa nibs, and berries. I also added some peanut butter after the pictures. YUM
Berry Blast Acai Bowl:
(Serves 1)
In a food processor/blender add:
1 frozen banana
1 frozen acai packet or 2 tbs acai powder
1 cup frozen pineapple chunks
1 cup frozen mixed berries or berries of choice
1 cup liquid of choice (I use coconut water or almond milk)
1 scoop of protein powder (optional but lately I have been loving About Time vegan protein powder)
Blend until a smooth texture is reached and enjoy 🙂
