The other night, laying in my bed, I had a mad craving for cinnamon raisin bread.
Mmmm. One of my all time favorite sweet snacks. I had planned on going to the grocery store to buy some, but instead, I made some.
And I am so glad I did.
Because This. Is. BOMB!!!
So cinnamon-y, fluffy, and delicious. It is perfectly sweet, melts right in your mouth.. Basically the best cinnamon raisin bread I’ve ever had.. If I say so myself.
I some how mad this oil free, and it turned out amazing!! The texture is perfect and the loaf turned out crispy around the edges 🙂
Recipe:
Preheat oven to 350F and grease a loaf pan with coconut oil, or use parchment paper.
wet ingredients:
2 cups of dairy free milk + 2 tsps apple cider vinegar, mixed & let sit for 5ish minutes
2 chia or flax seed eggs (2 tbs chia seeds + 5 tbs water)
1 ripe banana mashed
1 tsp vanilla extract
dry ingredients:
2 cups of whole wheat flour
1 tbs corn starch
2 tsps baking powder
3/4 cups of coconut sugar
1-3 tbs of cinnamon (depending on preference & quality of cinnamon)
1 cup of raisins
Method:
- Prepare the vegan milk and apple cider mixture and chia egg, and set aside. Mash your banana and add the vanilla extract, set this aside too.
- Get large bowl and mix all of the dry ingredients excluding the raisins.
- Fold in the raisins
4. Pour the mixture into your greased bread pan and let bake for 35-45 minutes, until the top is golden brown and a tooth pick comes out clean. Let cool before cutting.
