Summer Dandelion Cookies

Summer Dandelions Cookies, these little gems are soooo yummy and so beautiful!! <3

The whole process of making these are absolutely fun. It requires creativity, nature time, getting your hands nice & dirty… It is a fun, meditative process.. That results in (delicious) edible art!!! What could be better?

The inspiration for these came from the Summer Solstice, the beautiful, abundant energy, and the glorious dandelions that always bloom to their hearts content. I love dandelions, for many reasons- one being, that they are a perfect representation of the life-death-life cycle.. Blooming, drying, and then transforming into a beautiful, magickal fluffy seed.. that will bring new life. Its a gorgeous process. On top of that, consuming Dandelion is sooo good for you. To be honest, there are tons of health benefits- from being full of antioxidants to helping with allergies. When you eat these cookies you can taste the sweetness & flowery-ness of the dandelion. These will be super fun to create, and take to any summer gathering! My family was totally wow-ed by these! 🙂

What you will need:

2 cups of whole wheat flour
1/2tsp baking soda
1 cup of sugar
1/2cup of coconut oil
2tbs of flax meal + 5tbs water combined (makes 2 flax eggs, can sub for chia seeds!)
2tsp vanilla extract
1/4cup of vanilla almond milk (any nut milk works)
As many flowers as you want- get buds, all the way bloomed flowers, a nice variety (read directions step 2)
To make the “glue” you will need to make a thin glaze- you can combine with water, either: date syrup, honey, agave, maple syrup or powder sugar. about 1tbs of sugary parts to 1/4cup water.

Directions:

  1. Make your fax eggs by combining the water & flax meal, let sit while you combine the dry ingredients & pick your flowers.
  2. Go into nature/your neighborhood. Bring a little bowl to collect a lot of dandelions. Or you can pick any other edible flower you want, but I cannot promise they will taste the same! Make sure you ask the plants for permission, and pick them with love. I recommend keeping some stems, and getting super creative with the cookie designs. You can rinse them gently in water to get dirt & bugs off. Make sure you pick flowers that have not been sprayed with chemicals!
  3. Set your oven to preheat to 350F.
  4. In a large mixing bowl, mix together the flour & baking soda
  5. In a smaller bowl, cream together your coconut oil, sugar, vanilla, almond milk, and flax eggs.
  6. Create a well in your dry ingredients, and add the wet ingredients. Combine with a spoon until your batter starts to become like cookie dough. Knead for a minute with your hands, and then put in the freezer for about 5 minutes to set.
  7. While the dough is setting, grease & flour a cookie sheet, or line it with parchment paper.
  8. When you take your cookie dough out of the freezer, knead one more time before you begin to form the cookie dough into balls. Flatten the balls out into a cookie shape, they should not be too thin because they will expand as you bake them.
  9. Make your glaze, which will acts as the glue.
  10. Spread a little bit of the glaze on the cookie, and place the dandelions on them to where they compltely stick flat. You might want to make sure the stems are pressed into the dough a tiny bit. Cover the flowers with a little more glaze once they are on. Decorate however your heart desires! The cookies do expand so you can out more flowers than you think you should.
  11. Bake for about 15 minutes, depending on your oven it might take 20. Check on them frquentl after the 10 minute mark.
  12. When they are done, let them cook for about 10 minutes, and you are good to go!!!
