One of my favorite things in the world are blueberry pancakes. Its one of my ultimate comfort foods.
This recipe is; sweet, hearty, and melt in your mouth. These are not your traditional light & fluffy pancakes.. They are more dense & cake-y which I absolutely loovvee for breakfast! These keep me full for a while, with out making me feel heavy.
The Ingredient list is very simple, and these are seriously easy to make.
All you do is blend all the ingredients up & make like normal pancakes.. 🙂
Ingredients:
1cup rolled oats
1/4tsp baking powder
1 ripe banana
1 cup of nut milk (I use coconut milk)
1tsp vanilla extract + a dash of cinnamon (optional)
As many blue berries as you want
Toppings (optional):
Coconut whip cream
Sweet & Salty Chocolate Granola
Pure maple syrup
DIRECTIONS:
1. Put the oats in a blender, and blend until it turns into a flour.
2. Add the baking powder, vanilla, cinnamon, and plant based milk. Blend on low until all ingredients are combined & you have a semi-thick pancake batter.
3. Heat a pan on medium-low. Use coconut oil to coat the pan, and add your batter. Put blueberries on top of the batter, and then cover them up with a little extra batter. Let cook on each side for about 3 minutes. The edges will start to look cooked 🙂
4. Stack your pancakes, top with desired toppings and enjoy!! Mine made 4 medium sized pancakes.
